If you're referring to Mpix, "color correction" means "someone at Mpix sits at a monitor, pokes some color settings for your image, and makes it look pretty." Nothing more, nothing less. Some problems are that this isn't very consistent, and that the person doing the poking may have different aesthetics than you do.
Lastly, this all happens after the photo gets to Mpix for printing, so you won't be able to see any difference before you have the final print in-hand.
